This variety of fennel is also called Perfection Fennel. The bulbs are uniformly large, and have been developed for good bolt resistance. Slice the crispy bulbs and add to salads, or grill them. The leafy tops are a great seasoning for seafood, especially salmon. Fennel’s flavor is like sweet anise/celery and it becomes deeper and richer with cooking. Considered both an herb and a vegetable. Note: Fennel is a host plant for the black swallowtail butterfly!
