Bok Choy  is a fast and easy-to-grow type of Chinese cabbage that doesn't form a head; the tree leaf blades have a lighter bulbous bottom. Winter-hardy, it is used most frequently in stir-fries, chow mein, and Chinese soups. Leaves can be harvested from plant similar to spinach or kale. Mild and sweet flavor complemented by a crisp, delicious texture. This variety- Toy Choy- is a hybrid that is also called Pak Choi, can be grown easily in containers, and tolerates warm weather better than large varieties.
