Anise hyssop is also known as Agastache, Lavender hyssop, and licorice mint. Native to the mid-West, this heirloom plant has a minty, anise/licorice flavor, and is as useful in the kitchen as beautiful in the garden. The leaves and flowers make a refreshing, fruity tea, and can be added to salads as well. The lavender-blue flower spikes are perfect for both fresh floral arrangements and dried bouquets. It's deer resistant, fairly drought tolerant, and a big draw for pollinators. Plant this perennial now for winter rains to establish it as a mature drought-tolerant summer bloomer next year.
