These tender-fleshed scallop squash ("flying saucers") grow on space-saving, prolific bush style vines. They can be steamed or stir-fried with a variety of garnishes. They are small enough to be cooked whole, and should be harvested when they are no more than 2-3 inches across for the best flavor and tenderness. They have a distinctive nutty flavor.
